Coffee is one of the most widely consumed beverages in the world. The genetic variability of Coffea canephora has demonstrated significant differences in the chemical compositions of genotypes, resulting in different sensory profiles in the beverage. Fermentation can also affect the sensory quality of coffee beverage. Therefore, the objective of this study was to analyze the sensory profile and the chemical groups that contribute to the sensory qualities of the coffee beverage of C. canephora var. Conilon genotypes subjected to different fermentation processes. Fermentations were carried out with 4 L of cherry coffee or peeled cherry coffee for 36 h at 25 ?. In the induced fermentation, the initial Colony Forming Unit (CFU/mL) was of 107 for Saccharomyces cerevisiae, Klebsiella sp, and Lactobacillus brevis. There was no microbial inoculation in the washed fermentation and the natural process. The sensory quality and chemical groups of the coffee were determined using the Uganda Coffee Development Authority Sensory Analysis Protocol with 6 Q-Graders and mid-infrared spectroscopy, respectively. The sensory and spectrometry analyses were able to distinguish the genotypes, highlighting the separations of genotypes A1 and Verdim with the worst sensory results, and genotype 153 with the best result. Groups formation through the mean Euclidean distance reinforces the sensory differences between fermentations. Furthermore, the greatest chemical changes in coffee beans were promoted by fermentation induced by S. cerevisiae. Thus, the genotypes and the type of fermentation influence in the sensory quality demonstrating potential for optimizing fermentations to improve the sensory quality of conilon coffee. Para saber se uma cultura é viável economicamente, faz-se necessário conhecer os custos que incidem no seu cultivo. O objetivo deste trabalho foi avaliar o custo de produção da cultura do repolho em Venda Nova do Imigrante (no distrito de Alto Caxixe), e na região alta de Castelo (comunidades do Braço Sul e Forno Grande) Espírito Santo, Brasil. Para tanto foi realizado um estudo de campo, por meio de aplicação de questionário a produtores para o levantamento dos custos da cultura, bem como a avaliação do custo de oportunidade. A quantidade aproximada de plantas por hectare considerada foi de 55000 plantas. Para o cálculo do lucro final foi avaliada a média de preços paga no primeiro semestre de 2016, na Ceasa que foi de R$18,91. O custo de um hectare foi de R$29.505,00, e a produção obtida foi de 4000 caixas. Com essa produção, a receita média obtida foi de R$75.640,00/ha e verificou-se um lucro médio de R$46.135,00/ha, podendo variar para mais ou para menos, conforme análise de cenários apresentada. O repolho tem em média o custo de R$0,54/planta, e um lucro de R$0,84/planta. É mais lucrativo o investimento na cultura do que na poupança. Conclui-se que a cultura do repolho é uma opção para a agricultura sul-capixaba, com retorno em curto prazo.
To know if a crop is economically viable, it is necessary to know the costs that affect its cultivation. The objective of this work was to evaluate the cost of production of the cabbage crop in Venda Nova do Imigrante (Alto Caxixe district) and in the upper region of Castelo (communities of Braço Sul and Forno Grande) in Espírito Santo, Brazil. For this purpose, a field study was carried out, through the application of a questionnaire to producers for the survey of crop costs, as well as to evaluate the opportunity cost. The approximate amount of plants per hectare considered was 55000 plants. For the calculation of the final profit was evaluated the average price paid in the first half of 2016, in Ceasa that was R $ 18.91. The cost of one hectare was R$ 29,505.00, and the production was 4000 boxes. With this production, the average revenue obtained was R$75,640.00/ha and there was an average profit of R$46,135.00/ha, which may vary more or less, according to the scenario analysis presented. The cabbage has an average cost of R$ 0.54/plant, and a profit of R$ 0.84/plant. Investing in culture is more profitable than saving. It is concluded that the cabbage crop is an option for the south-capixaba agriculture, with a short-term return.
